First, I need to apologize about Saturday's post.  I had written it in Word and copied it over to Mindsay and before I got the chance to proof read the Devil showed up.  Since his visits are few and far between, I chose to turn the computer off and enjoy his company.  Needless to say, hours and hours later, when I got the chance to look at what I posted that was when I noticed that it was fucked up.

The visit from the Devil was nice.  He is doing better and spent the weekend with us, just hanging out.  I don't think he was on anything, or coming down from anything - he seemd good, except for the Elephant in the room.  He is seeing his therapist twice a week and said that he wasn't ready to talk about what has been happening.  I respect that, but it really limits the conversation as fighting Demons is the only interaction we have had with him for over a year now.  We played with little Princess, went for a 2 hr walk and watched movies on Saturday then we went to the Fat Stock Show on Sunday.  We celebrate the small victories around here, so I'm celebrating (non-alcoholic of course) the fact that I had a nice weekend with my first born.

Saturday night, I wasn't planning on cooking a full blown meal, so had another chance to re-work leftovers.  I already posted on re-working leftovers on December 14th, so go check it out if you haven't already.  Earlier in the week mr hester grilled a whole package of 1 1/2 inch thick pork chops and since that was the leftovers in the fridge, that's what got reworked (sorry Dad).  Here is what the menu consisted of.  Rolls from the freezer were put in the oven.  While they were cooking, I sliced the pork chops as thin as I could with a knife (don't have a slicer yet, but did add it to my list of coveted kitchen tools).  On a serving platter, I placed thinly sliced meat, lettuce, tomatoes, green and black olives, dill pickle slices and sliced onion.  The condiments (mayonnaise, mustard & ketcup) were placed in small dishes on another serving platter.  When the rolls were done, I split them in half and took a slice of pre-wrapped cheese, broke it in half and then folded the half into quarters, placed two quarters on each roll and put the top back on to allow the cheese to melt.  Put the rolls in a bread basket and on the table along with the meat dish.  The boys then used the rolls to build little sandwiches that were promptly named Mini Me's and we had a whole conversation around Mini Me and the Austin Powers movies (whew, dodged the Elephant for a while).  This was real quick to throw together and I didn't even heat up the pork chops.  It was a real crowd pleaser, but the boys used the lettuce, tomatoes, olives, etc to build a salad on their plate as they only wanted the meat and cheese on their sandwiches.  So salad dressing joined the condiment tray.  I ended up cooking more rolls as between hubby and 2 growing boys all 12 rolls were consumed - oh well the leftover pork chops got consumed as well.

On another note - testing will commence at 0500 tomorrow morning and if I get a chance will post if there was one line or two after I pee on the stick.
