Unconventional Meals
Sometimes, at my house, we have rather unconventional meals. Last night was one of those nights. We eat a lot of chicken and I always try to come up with new ways to serve it so that it doesn’t get boring. Last night I had 5 chicken breast thawed and when it came time to cook them, I started looking through the fridge to see what was available. I have used some sort of mustard covering in the past such as slathering the chicken with mustard and chopped pecans and baking it, but last night I spied the Mayonnaise and wondered – huh, will this work? So I looked around some more and found a partial block of parmesan cheese and here’s how the chicken got dressed (but not by themselves). I put about a cup of mayonnaise in a bowl and grated up the parmesan cheese added a dash or two of cayenne pepper and several generous sprinkles of paprika, stirred it up and slopped it on top of the chicken breast. The breasts were already sitting on a cookie sheet, covered with aluminum foil. You could use the dry parmesan cheese stuff out of the famous green can, but I only use that for pizza and really prefer the freshly grated cheese (you can buy it in a tub already grated). Actually, you could probably use any kind of cheese you have on hand. Then I sprinkled Italian style bread crumbs on top of the mayonnaise mixture (because that’s what I found in the cupboard) and put it in a 350 oven to bake for 35 minutes. Except for the breadcrumbs, this is a very Atkins Friendly recipe. Now comes the unconventional part – when the chicken had about 16 minutes left to cook, we decided that we needed to go to Kohl’s to shop. Teeny, my middle son, has a banquet tonight and remembered (at the last minute) that he wanted a new dress shirt to wear to it. So we turned off the oven (with 16 minutes left) and went to Kohl’s and returned about 1 ½ hours later. Walla – the chicken was done, perfectly cooked and still warm. I heated up some bread, chopped up a salad and dinner was served. It was very yummy (i.e. a keeper recipe) and the chicken was very, very moist and delicious. Did I tell you that it was very moist? The topping reminded me of a fish dish that I’ve eaten at Luby’s Cafeteria before (sorry, don’t remember the name). We have the banquet tonight, but the leftovers will probably be chopped up into chicken salad for this weekend and the spices and mayonnaise are already there.
