

I made the Cranberry Hazelnut Biscotti with Chocolate recipe that I posted to chefhester last night and the above pictures are the results.
I do have a couple of comments on the recipe. After the first bake where it tells you to cool for 5 minutes then cut - don't let it cool for more than 5 minutes. I did and had to "saw" through mine with a serrated knife to get them cut. Suspect that they would have been easier to cut when they were warm. I was also cooking dinner and let them cool for about 20 minutes - bad Hester, bad! I cut mine about 1 inch thick, instead of the 3/4 inch that the recipe recommends and they didn't crisp up enough in the additional 10 minute baking time you cook them after they are cut. Not a problem, I just turned off the oven and let them sit in there for about 10 more minutes while I finished up the dishes. These are sweeter biscotti than the kind that I usually get at Starbucks and the chocolate is tiny little pieces spread throughout the cookie.
This morning Mr. H. walked into the kitchen and saw me dunking my biscotti in my coffee and eating it and said "Does doing that make them easier to eat?" I had to laugh at this one. See, I went to bed before him last night and left the cookies in a bag on the counter and am guessing that he saw "cookies" and happily dug in. Trying to picture the look on his face when he chipped a tooth on the biscotti.
